Potato Pancakes
Potato Pancakes
- 3 cups shredded peeled potatoes
- 2 eggs
- 1/4 cup diced onion
- 1/4 cup flour
- 3 tablespoonsparsley
- salt, pepper
Mix all ingredients in bowl. Shape into patties. (About 6-8.) Cook on griddle or pan at medium-high heat for about 6 minutes per side. Serve with sour cream or applesauce.
